Sweet Potato Noodles, for Bowls and Other Dishes

Sweet potatoes can be spiralized or julienned into fantastic noodles. They give zucchini and “Zoodles” a run for their money. Maybe they could be called “Swoodles”? Anyway, they taste great, and they’re easy to make.
Peel and spiralize or use a mandoline or handheld julienne peeler to transform each sweet large sweet potato into about 4 cups of “noodles.”
One (or more) sweet potatoes
Bring a pot of water to a boil and add the sweet potato noodles. Test them after a minute, but they might need one or two more minutes to get to the tenderness you like. Once they reach that texture, drain them and run them under cold water.
The noodles are more delicate than grain-based noodles, and they seem to be more susceptible to breaking in a hot dish compared with a cold dish, and also when they are stirred more. My favorite dish is “cold sesame noodles” using these noodles and the sauce from this recipe. Or a bowl with these noodles, other vegetables, legumes or baked tofu, and this peanut sauce.
