Vegan Greek Meatball Sandwiches

Everyone loves meatball sandwiches. The best-known meatball sandwich is the Italian variety where the meatballs are drenched in marinara sauce and topped with mozzarella cheese. This Greek variation is more delicious in my opinion,, made with flatbread rather than hoagie or submarine buns. The cucumber-based tzatziki sauce is addictive! Everyone can customize the toppings and make their sandwich unique.

Makes as many sandwiches as you want
Warm up the meatballs.
12 ounces Gardein or other frozen vegan meatballs, or a batch of homemade Best Vegan Meatballs (you may not need the whole batch)
Serve the meatballs on flatbread.
Whole wheat pita bread or other flatbread, warmed if desired
Top the meatballs with tzatziki and vegetable toppings, as desired.
Chopped or sliced red onion
Chopped or sliced tomatoes
Shredded lettuce
Other plant-based meatball sandwich ideas
Barbecue meatball sandwich: roll, barbecue sauce (for an oil-free homemade sauce, see here), toppings such as coleslaw, pickle slices, avocado, tomato, and/or mango salsa.
Swedish meatball sandwich: top meatballs in a roll with light gravy and add your choice of toppings: pickles, cooked and grated beets, red onion slivers, braised red cabbage.
Mediterranean meatball sandwich: spread roll with hummus and top with your choice of sliced cucumbers, sliced tomatoes, sliced or slivered onions.
Chili meatballs sandwich: top meatballs in roll with plant-base chili and add your choice of toppings: coleslaw, pickles, red onion slivers, chopped white onion, plant-based sour cream, plant-based crema, and/or plant-based nacho cheese sauce.
