Catalina Dressing (no-oil)

I love trying to make favorite salad dressings without oil. So many of them taste delicious with natural substitutions for oil. In this one, as in many, I use a combination of tahini and water to replace the oil. Many Catalina recipes call for ketchup, but subbing tomato paste and a little extra vinegar works well. This dressing has a fresh, almost sweet-and-sour tang to it and is delicious!

Makes about 1.25 cups

Blend these in a blender or with an immersion blender until smooth and creamy.

  • 1/4 cup red wine vinegar

  • 1/4 cup chopped sweet onion (white or red)

  • 3 Tablespoons maple syrup (or more if you like a sweeter dressing)

  • 3 Tablespoons water

  • 3 Tablespoons tomato paste

  • 2 Tablespoons tahini

  • 1 teaspoon Braggs Liquid Aminos or soy sauce

  • 1/2 teaspoon paprika (I prefer sweet paprika, but hot is okay too)

  • 1/4-1/2 teaspoon hot sauce (Tabasco or siracha) 

  • Salt and pepper to taste
