Catalina Dressing (no-oil)
By the Gracious Vegan
I love trying to make favorite salad dressings without oil. So many of them taste delicious with natural substitutions for oil. In this one, as in many, I use a combination of tahini and water to replace the oil. Many Catalina recipes call for ketchup, but subbing tomato paste and a little extra vinegar works well. This dressing has a fresh, almost sweet-and-sour tang to it and is delicious!
Makes about 1.25 cups
Blend these in a blender or with an immersion blender until smooth and creamy.
1/4 cup red wine vinegar
1/4 cup chopped sweet onion (white or red)
3 Tablespoons maple syrup (or more if you like a sweeter dressing)
3 Tablespoons water
3 Tablespoons tomato paste
2 Tablespoons tahini
1 teaspoon Braggs Liquid Aminos or soy sauce
1/2 teaspoon paprika (I prefer sweet paprika, but hot is okay too)
1/4-1/2 teaspoon hot sauce (Tabasco or siracha)
Salt and pepper to taste
