Fabulous Green Goddess Dressing (no oil)

I always think of green goddess dressing as such a treat, even though it isn’t hard to make. The main challenge is to buy (or grow) enough fresh chives, which are critical for the flavor. This dressing adds an elegance and brightness to any salad it meets.

Makes about 1.5 cups

Put the following ingredients into a blender and blend until smooth. 

  • 1/2 cup silken tofu (you could also try 1/2 cup cooked white beans or 1/2 cup vegan mayonnaise or 1/2 cup thick cashew cream)

  • 1/3 cup water

  • 3 Tablespoons tahini 

  • 2 Tablespoons nutritional yeast (What is Nutritional Yeast?)

  • 2 Tablespoons fresh lemon juice

  • 1 Tablespoon miso (What is Miso?)

  • 2 teaspoons onion powder

  • 1 teaspoon garlic powder

  • 1 teaspoon dried tarragon (or less, if you’re not a tarragon fan)

  • 1/2 teaspoon salt

Add the chives and parsley and blend until you reach your desired level of green-fleck size (some like it all smoothed out; some like little flecks of green)

  • 1/2 cup fresh chives, roughly chopped

  • 1/2 cup fresh parsley, roughly chopped

Add more water if needed. Note, it will thicken up in the refrigerator after a few hours, so you may need to stir in more water later.
