Apple and Carrot Spirals in an Easy Slaw

If you have a spiralizer, this salad makes set-up and clean-up worth it. The taste of this simple slaw has a depth and subtlety that you may not expect. If you don’t have a spiralizer, you can use the smallest julienne blade on a mandoline.
Makes 6-7 cups of slaw
Whisk together the dressing ingredients in a small bowl or shake them together in a lidded jar.
4 teaspoons apple cider vinegar
1 Tablespoon tahini
1 Tablespoon water
1 Tablespoon maple syrup
1/2 teaspoon salt
Freshly ground black pepper to taste
Separately, spiralize the following ingredients using the smallest triangle blade. Then cut the ribbons into 4-6-inch pieces with scissors or a knife. Transfer to a large bowl.
2 Granny Smith apples (stems removed)
2 carrots
Add the following ingredients and the dressing to the bowl and toss. The slaw is ready to serve.
2 cups finely shredded cabbage (I like purple for color, but green is fine too)
2 scallions, thinly sliced
(Note that the carrot, apples and cabbage equal about 6 cups, so you can substitute proportions or other fruits and vegetables freely to get to 6-7 cups. Note that the fruit flavor from the apple and onion flavor from the scallions are key to the “bite” of this salad’s flavor.)
